Homebaked Rainbow Cakes

I have long been wanting to make my own rainbow cake (minus the red layer) which I did finally! It’s such fun and joy to bake especially when it involves colours. This time, I have injected yellow, green and blue into this vanilla-flavoured butter cake below. For this 3 layered Butter Cake, the three moist layers of cake are sandwiched together and frosted with a smooth and creamy vanilla frosting and kit kat in between the layers. This is one of my favourite party cakes and I foresee myself baking this again in time to come. Ingredients for the cake 3 cups (300 grams) sifted cake flour 3 1/2 teaspoons baking powder  1/2 teaspoon salt 3/4 cup (170 grams) unsalted butter, room temperature 1 1/3 cups (265 grams) granulated white sugar  3 large eggs (110 grams) 1 cup (240 ml) milk (full fat or low fat) 2 teaspoons pure vanilla extract 1 teaspoons of yellow, green, blue colouring extracts each Rainbow coloured chocolate bits (for decoration purposes) White Frosting: 3 individual packets of chunky kit kat bars (170 grams), coarsely chopped 1 cup (226 grams) unsalted butter, room temperature 1 1/2 cups (180 grams) confectioners (icing) sugar, sifted 1 teaspoon pure vanilla extract   How to make the coloured Butter Cake:  1. Preheat oven to 350 degrees F (180 degrees C). Butter and flour (or spray with a non stick vegetable/flour spray) three (15 x 5 cm) heart shaped cake pans. You could use round or square ones of about the same size. 2. In a bowl sift or whisk the flour with the baking powder, and salt. 3. In your bowl of the electric mixer, beat the butter under soft and creamy. Gradually add the sugar and beat until it turns light and fluffy. Add the eggs in batches, beating well after each addition. Add in the vanilla extract and beat until combined. 4. With the mixer on low speed, alternately add the flour mixture (in three additions), and milk (in two additions), beginning and ending with the flour. 5. Evenly divide the batter into 3 bowls,  then add 1 teaspoon of yellow, green, blue colouring into the 3 bowls to create 3 different coloured batters. Fold in the colours to the batter with the spatula till it’s well mixed. 6. Bake for about 12-13 minutes. Insert a toothpick into the center of the cake and it should come out clean. The Chocolate Chips Cookies Recipe

When I was craving for some chocolate chip cookies but found none in my kitchen, I decided to whip up some to share with family and friends. I feel that this recipe is very versatile as we are able to replace chocolate chips with almost every other goodies such as white chocolate chips, raisins or even healthier versions such as grains, nuts and even bananas! Chocolate Chip Cookies  (Yields 30 cookies) Ingredients: 2 1/4 cups all purpose flour 3/4 tsp baking soda 1 tsp fine salt 12 ounce semi sweet chocolate chips or chunks 1/2 cup unsalted butter  3/4 cup packed brown sugar (You can add more if you have a sweet tooth) 2 large eggs 1 tsp vanilla essence 1/2 tsp espresso powder (optional) Total Time: 1 hr 5 min Prep: 20 min Inactive: 30 min Cook: 15 min Directions: Put the butter out in room temperature to make sure that it is soft. Evenly position 2 racks in the middle of the oven and preheat to 190 degrees C. Line 2 baking sheets with parchment paper or silicone sheets. However, if you only have 1 baking sheet, let it cool completely between batches. I didn’t use baking sheets but buttered the baking tray very slightly (make sure that you don’t over butter otherwise your cookies will turn out oily). Whisk the sugars, eggs, butter and vanilla in a large bowl until smooth. Whisk the flour, baking soda and salt in another bowl. Stir the dry ingredients into the wet ingredients with a wooden spoon, take care not to over mix. Stir in the chocolate chips or chunks and make sure that it’s evenly mixed. Scoop heaping tablespoons of the dough onto the prepared pans. Wet hands slightly and roll the dough into balls. Space the cookies about 2-inches apart on the pans. Bake, until golden, but still soft in the center, for about 12-15 minutes, depending on how chewy or crunchy you like your cookies. Transfer hot cookies with a spatula to a rack to cool and serve.   Store cookies in a tightly sealed container for up to 5 days. Chocolate Crinkle Cookies

This recipe is for the chocolate lovers. These chocolate crinkle cookies are rolled in confectioner’s sugar and baked until it’s chewy.  As these chocolate cookies bake, they puff up and crackle, thus they are called crinkle cookies.  My recipe used below is a little sweet, therefore if you want to want a healthier version you could use less sugar e.g. 1/2 cup granulated sugar. Makes 2 dozen! Prep time: 20 minsWait time: ~2 hrs Cook time: 15 mins Total time: ~2 hrs 35 mins Ingredients: 1 cup of All Purpose Flour 2/3 cup of Granulated Sugar (Quantity could be reduced for a less sweet version) 1/2 cup of Cocoa Powder 1/4 cup of Unsalted Butter, softened at room temperature 1 tsp of Baking Powder 1/4 tsp of Salt 2 Large Eggs 1 tsp of Vanilla Extract 1/2 cup of Confectioner Sugar 1/2 tsp of Instant Espresso Powder (Optional) Direction: 1) In a bowl, whisk together the flour, cocoa powder, salt, baking powder and instant espresso powder, set aside. 2) In the bowl of a standing mixer fitted with a paddle attachment, cream together the butter and sugar. Add the vanilla and eggs and mix until creamy and smooth. 3) Add the dry ingredients (in Step 1) and mix them in long enough (~5 mins) to combine.   4) Place the dough in a bowl, cover and refrigerate for a minimum of 2 hours or up to overnight. 5) Preheat your oven to 180 degrees C, line a couple baking sheets with parchment paper and set aside.  Note: I didn’t use parchment paper here. Parchment paper will help to reduce burnt bits on the trays and baked goods wouldn’t stick.   6) Using a small ice cream scoop or two spoons, form little balls of dough and coat them in the confectioner sugar, place them a couple inches apart on your prepared baking sheets. Recommedation: It’s best to sift the Confectioner sugar so that it will be finer and smoother.   7) Bake the cookies for 13 to 15 minutes and allow them to cool completely before serving. See that cookies crinkled?  I added more sifted Confectioner sugar here. However, you could skip this step and serve. I’m happy to have tried this recipe and well there is still room for improvement. The time that I used to bake was initially 12 mins and the cookies didn’t crinkle. However if the cookies were baked for at least 15 mins, you would see the cookies puff up. Miam Miam French Japanese Cafe with a Twist

I was craving for tantalizing pretty desserts and was attracted by the French-Japanese inspired dishes at Miam Miam – Westgate Jurong as it looked promising. It serves up flavours and ingredients of Japan prepared with French artisan cooking techniques. When I visited the restaurant at 6pm on a weekend, the queue had already formed and the restaurant was rather full. The wait time was about 15 minutes before I could get a seat.   There are no lack of choices at Miam Miam with home made spaghettis, French bisques and sandwiches, pancakes, soufflés, parfaits, rice and a selection of matcha drinks and coffee. Every food dish is made from scratch, therefore you will need to wait a little while from between 15 to 30 minutes for your food. The ambience and atmosphere at the Westgate outlet are just Plain Amazing. Love the choice of lightings and colourful selection of chairs and plush sofa corner seats that are comfy.  After SP arrived, we proceeded to make our orders! Seafood Tomato Cream Spaghetti – SGD$18.80 This dish comes with flavours of the sea – squids, green mussels, prawns, scallops and clams topped with garlic mayonnaise. The portion is good for 2 pax. Great for sharing! Initially, SP thought that I have ordered Seafood CURRY spaghetti as the sauce resembled those of the Indian curry. Taste wise, this dish is quite okay. Maybe because I am biased towards TCC’s seafood aglio olio? [See my previous post on Tcc – The Connoisseur Concerto] Riz Noir Black Rice – SGD$17.80 This has got to be one of the best Squid Ink Rice ever! It makes your teeth black when you’re eating it but it’s just so tasty that you’ll forget about how you look whilst digging into this dish.   Valrhona Chocolate Soufflé – $13.80 One of the best sellers in Miam Miam is the Valrhona Chocolate Souffle. Almost all tables were ordering this dessert and we just gotta try it!   Indulge in a true moment of ecstasy with heavenly decadent melted chocolate on top of your souffle!   Meetup with SP 🙂 Recommendation: 1. This restaurant has a policy which allows groups to enter only when all the guests have arrived. 2. Note that the desserts come 30 minutes after your main dishes are served. TCC – The Connoisseur Concerto

During this season of the Great Singapore Sale (GSS), TCC is currently offering a 1-for-1 promotion on their main dishes and pastas for their members. Most of my family and friends are already members and we took the opportunity to feast again on our favourite dishes at TCC! Note: To qualify for membership, you will need to spend just SGD$80 on one receipt. The great thing about this membership is during your birthday month, you get 50% off your bill (excluding 7% GST and 10% Service Charge) for the first visit of your birthday month and 30% off for your second visit.   The Appetizers Wild Mushroom Bisque This is a bowl of creamy wild mushrooms broth served with garlic bread. Their mushroom soup is not too thick and this bowl alone is likely to make you full, therefore it’s good to share unless you have a big appetite. The Tuna Salad is also a must-try. There are 5 pieces of tuna per plate tossed with homemade citrus-miso dressing.  Tuna Fish Salad Pastas This has got to be my personal favourite pasta – the Spaghetti Aglio Olio flavoured with chilli and garlic and accompanied with prawns and pan-seared scallops. I have eaten this dish for at least 10 times so far and I’m pretty sure that I’ll order this at my next visit. Note: This dish is rather spicy due to the chilli padis and seeds found in the whole dish. You could request for a less spicy dish when placing your order. Seafood Aglio Olio  A new dish added to the menu recently is the Soft-shell Crab with Black Pepper Pasta. It’s my second favourite pasta now. The Spaghetti is tossed in spicy teriyaki black pepper sauce, crowned with crispy fried soft-shell crab and asparagus spears. I love the generous serving of tobiko as the garnishing too. As for this Chicken Spaghetti, the taste is just so-so. I do not recommend this as the above two choices are definitely better than this. Mains TCC has a good selection of great tasting healthy main dishes too! This is one place where you can feast on delectable, guilt-free food!   Oven-roasted Spring Chicken with Brown Jus Beef Striploin with Yakiniku Butter Sauce Snacks If you’re looking just to have some munchies or small bites, try the hearty portion of wedges with irresistible melted cheese dip. Thailand Travel Blog – Bangkok Mr Jones Orphanage at Siam Center

I’ve been to Siam Center, Bangkok for shopping but it’s my first time going to Mr. Jones’ Orphanage located on the 3rd floor – a great recommendation from my BKK travel buddies Mr Ho and Ros. Their Signboards…    This is a whimsical cafe which serves cakes and drinks. The whole outlook resembles an oversize dollhouse that has a quirky charm with overhanging trains, trains tracks, planes, teddy bears hanging from low lamps and toy soldiers displays etc.  When we reached there at about 4pm, the place was crowded and all seats were taken on 2 sides of the cafe. We waited in queue for about 20 minutes before we were ushered to our seats. The decor brings back childhood memories and the cakes table display at the entrance is ‘Aww-so-beautiful’. The Cakes are freshly prepared and made and you could catch the glimpse of the chef preparing your order. Once a cake is sold, it’s sold and usually there’s no replacement of that cake for that day. Then again, you will be so spoilt for vast selections there as most of these cakes are just so exquisite  and tasty! There is enough to satisfy any kind of sweet tooth, whether you fancy a grown-up semolina, pistachio and honey cake or a scone with jam, or perhaps even my childhood dream cake, a triple chocolate M&M Kitkat cake with chocolate mousse filling. The list doesn’t stop there – they serve cookies, brownies, red velvet cake and a large chocolate and cream cake that looks like an Oreo. I will suggest that you come with friends and share the cakes as you will be tempted to order more than what you can eat in one go. After eating till you’re sugar high and guilty, you can then go hit the gym! In a nutshell, if you’re a cake lover looking for a child-inspired experience, this is the place for you ! The teddy bear toy-theme factory-like cafe is highly patronised by customers, so spare a little while waiting for a free table when you’re there over the weekends. The Bio-Engineers met up for a Italian’s Job dinner buffet at Tablescape – Moevenpick Heritage Sentosa Resort to kick start the weekends!   Tablescape – the hotel’s flagship restaurant is designed in a contemporary style, yet it has a relaxed vibe so guests can appreciate its premium Euro-Asian fusion cuisine in style and comfort. For the dinner buffet, Tablescape offers a selection of heritage menus featuring both western and local cuisines, with a soup and salad bar with ‘live’ cold station, or more casual items like premium pastas, pizzas and sandwiches for those looking for a quick bite to eat. Guests could also order freshly brewed speciality tea (TWG) and coffee and a wide selection of pastries. We got there early and the place was still empty.  🙂 I was craving for the prama ham and we needed somewhere with good, quiet with nice ambience for catchup… and so I suggested to dine over there for a dinner buffet.   Here’s some of the starters… … As the theme for the night was the Italian Job, we could order a freshly made Pasta or some Pizzas as part of our mains.
